There is something about food's ability to bring people together. it should come as no surprise that Canada given it's size and diversity, would have a thriving culinary scene that holds it's own against the world's best. 

Savio Volpe (Vancouver, BC)

Rooted in Italian history and presented in Italian modernist packaging, Savio Volpe uses the essence of the classic neighborhood osteria to deliver an uncomplicated dining experience with rustic authenticity. The restaurant’s cozy atmosphere lends itself to an extension of familial dining with nooks and booths to find comfort and familiarity in. Nostalgia is present in the menu’s focus on the tradition of simplicity, freshness and regionality. Rather than import ingredients from distant Italian origins, the osteria delivers its freshness through groceries drawn from farms, lakes, fields and oceans that surround the Fraserhood establishment.

Café Boulud (Toronto, ON)

Café Boulud  is based on the namesake Michelin star Manhattan success story by Chef Daniel Boulud. Comfortably-positioned just above street at the Four Seasons hotel in Yorkville, the restaurant features a menu that is seasonally based and rooted in French tradition. The French Brasserie’s menu highlights bistro classics and contemporary dishes that are inspired by Chef Daniel’s family meals while he was growing up in the French city of Lyon. The interior of the Café was revamped by London-based designer Martin Brudnizki with vintage-inspired ambiance and wraparound banquettes.

Lavanderia (Montreal, QC)

The concept behind La Vanderia is based on the owner, Chef Antonio Park’s experiences growing up in South America. At the “lavenderia” where his family lived and worked, they would set up a parillada under a mango tree where they could grill entire butterflied cows. A meal at Lavanderia’s Montreal restaurant mimics his experience with the parillada and includes the array of meats like the ribs, bone-in striploins and chorizo that his family would consume together. The restaurant elevates this authenticity in the preparation of the meal without compromising on a familial experience that is inevitable.

Pilgrimme (Galiano Island, BC)

In commendable farm-to-table form, Pilgrimme situates itself on Galiano Island, a stone’s throw from British Columbia’s major hubs but distant enough to warrant a traveler’s experience. The forest and the ocean that form the island show up most noticeably on the plate but are also present in the interior decor. Working with regional collaborators for everything from the eggs to the ceramics they use, Pilgrimme offers local eating with otherworldly flavor. The restaurant took over its current space from the French restaurant La Berengerie and was recently honoured by EnRoute as one of the best new restaurants in Canada.

Pigeonhole (Calgary, AL)

Pigeonhole packs a punch in it’s plates. The wine and snack bar focuses on creating mesmerizingly colourful dishes that are best delivered when quantity meets quality and the restaurant is one of the first in Canada to deliver a completely natural and organic wine list. Pigeonhole took over the antiquated Victoria’s Restaurant and cheekily they’ve kept a few reminders of the Calgarian staple including the restaurant's outdoor sign over which they’ve added their own. The interior red bricked walls, tiled floor and copper ceiling add to the eclecticism of dining at the Calgarian restaurant.
