Cocktail of the Week: The Mirepoix Experience

Looking for a fresh take on a Canadian classic? Timo Salimaki (of Calgary’s The Living Room) took home the title at Bombay Sapphire’s Most Imaginative Bartender Competition for his Caesar-esque cocktail, The Mirepoix Experience.

Here’s how to make it:

Mirepoix recipe:

· 1lb of Carrots peeled and roughly chopped

· 1 stalk of celery chopped

· 2 large yellow onions chopped

· 1 large red bell pepper chopped (remove seeds)

· 1 large orange bell pepper chopped (remove seeds)

· 5 cloves of garlic

· 1L chicken stock

· 1L Beef Stock

· 1L Water

· 1 tbsp ground cumin

· 1 tbsp ground ginger

· Salt + pepper to taste

· The Juice of one lemon

Method

Add all vegetables and spices and sauté in a pot until onions become translucent. Add stock and water. Simmer for 3 hours. Blend, and pass through chinois lined with cheese cloth. Finish with lemon juice

Ingredients

2oz Bombay Sapphire London Dry Gin

0.5oz Cointreau

1.75oz Spiced Mirepoix Tincture (recipe to the right) 

0.5oz Ginger Syrup

0.5oz Lemon Juice

2 dashes Bittercube Orange Bitters

Method

Place all ingredients into a shaker. Add ice and shake. Double strain into a chilled coupe glass.
